I haven't moved towards suet/tallow yet, although I see it mentioned sometimes.
I still have a jones for McDonald's fries in tallow. Some sort of study with twenty-somethings that had never had them did a fries taste test with tallow and two other fats and they lit up and were unanimous that it was legendary.
tallow is not uncommon here, and it's pretty great. All things fried in moderation, but it is good, and at some butcher shops it is cheap too.
In this area fatback is commonly used with green beans, as well as other beans, greens, peas, even corn. When I first moved down here I didn't think I'd like it that much, but it's good, so I could see how bacon would work as well.

For less fat or grease, try smoked turkey wings or necks. Fantastic flavor and a bit healthier. (Nasty woman nag, I know )
When I was living in Berkeley, my grandma sent me a box of Thanksgiving sidesâcorn, green beans, cranberry sauce, all homemade in glass jars, with a recipe on the lid. The corn is for what we call scalloped corn, a casserole. The green beans had chopped mushrooms in them and the lid said to put in bacon and the Berkeley roommates all howled at the ridiculousness of that but I did it anyway. The vegetarians picked around the meat but admitted that the beans were wonderful. Bacon fat helps everything.
